Quick & Easy Meatballs

 1 lb (500g) lean ground beef
 1 small onion, finely diced
 2 garlic cloves, minced
 1 red pepper, diced
 1 egg
 ½ cup (30g) buckwheat flour
  cup coriander, chopped
 1 tsp oregano
 ½ cup marinara [or ¼ broth]

Place all the ingredients in a bowl, season with salt and pepper and mix well using your hands. Once everything is well combined, form 12-14 meatballs the size of a small ping pong or golf ball (use a ¼ cup for measuring).

Add a tablespoon of oil of choice in skillet. Heat to medium. Sear meatballs, move often to avoid burning. Turn heat to low, add 1/2 cup marinara (see recipe if making your own). Simmer for 10min on low. You can skip the marinara all together, just cook at low and add ¼ broth to base of skillet.
