 ½ cup (30g) buckwheat flour

Place all the ingredients in a bowl, season with salt and pepper and mix well using your hands. Once everything is well combined, form 12-14 meatballs the size of a small ping pong or golf ball (use a ¼ cup for measuring).

2

Add a tablespoon of oil of choice in skillet. Heat to medium. Sear meatballs, move often to avoid burning. Turn heat to low, add 1/2 cup marinara (see recipe if making your own). Simmer for 10min on low. You can skip the marinara all together, just cook at low and add ¼ broth to base of skillet.

Eggplant and Couscous

Eggplants, also known as aubergines, offer several health benefits because of their nutrient content and unique phytonutrient profile. Eggplants contain antioxidants such as Vitamin C and E, are rich in dietary fiber that promotes the growth of beneficial gut bacteria and is a low calorie, low carbohydrate food. Plus, they are easy to grill, roast, sauté or bake making them a versatile vegetable. Couscous is widely consumed in several Mediterranean countries. It is a great source of fiber and a valuable source of plant-based protein which is important for weight loss, muscle repair, and overall health. We hope you enjoy this recipe.
